Saint-Nicholas Day is the occasion for celebration in many parts of Europe, for the children there will be presents and for children and grown ups alike special treats like this
2 ½ cups all-purpose flour (or 2 ¾ cups cake flour)
1 ¾ cups granulated sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup butter, softened
1 cup milk
2 teaspoons rum or brandy extract
4 eggs
½ cup raisins
½ cup cut-up candied cherries
½ cup chopped pecans
