Sacher cake





This recipe was created in 1832 by Franz Sacher for Prince Metternich, the foreign minister of Austria. Sacher was only 16 at the time, and it was created on the spur of the moment so Sacher must have had very good intuitions about what a good cake should be like. Essentially it's a chocolate cake layered with apricot jam and covered in chocolate icing. The original recipe also calls for the use of unsweetened whipped cream.
